Pasta In Creamy Spinach Sauce! - Recipe for Fussy Toddlers

This is my second, quick pasta recipe for children who are difficult with food. Of course, this is also a hot favourite with some of my friends and you can undoubtedly try this for a small group of adults for a small house party.

This pasta is green and is based on a Spinach and Cheese sauce. Spinach has great health benefits and can't get better in taste than this recipe, trust me! In a previous blog of mine, I had written about the health benefits of Spinach along with an Indian Palak Paneer recipe.

Also, one of the last recipes I shared for fussy-eating toddlers in my blog was "Pasta In a Jiffy! Recipe for Fussy Toddlers". The pasta was based on a white sauce which involves a very easy, unsophisticated procedure of making the white sauce and can be enjoyed by adults too.

For Pasta in Creamy Spinach Sauce, you will need:

1. Fusilli Pasta - one tea-cup
2. Spinach, blanched and pureed - half a bunch3. Milk Cheese Slice - 24. Olive Oil - 1 tablespoon5. Butter - 2 teaspoons
6. Garlic - 2-3 cloves, finely chopped
7. Salt, to taste
8. Sugar (optional) - 1/8th teaspoon
9. Dried, mixed French Herbs - 1/4th teaspoon


Preparation Time: 10 mins
Cooking Time: 15 mins
Serves - 1 meal for children aged from 2-5 years

Cooking:

  • Boil the Pasta and keep it aside.
  • Warm the Olive Oil in a pan and sprinkle in the chopped Garlic.
  • As soon as the Garlic turns glassy, pour in the Spinach puree and keep stirring gently on a medium heat.
  • Put the two slices of Milk Cheese and stir till the cheese melts and  blends completely with the Spinach Puree to give it a bright, green colour and creamy texture.
  • Sprinkle in very little Salt, as the sliced cheese already contains salt.
  • Sprinkle in the sugar for a balanced taste. 
  • Put the dried, mixed, French Herbs and pour the sauce into a bowl and mix in the Pasta with the Green Sauce.

                                       mix till they blend perfectly to give a bright green colour and a creamy texture

You may serve the Pasta to your kid with a cube of Butter on top. Children love the smell of Butter and it also makes the texture of the Spinach-based sauce creamier. In case you want to grate in some Cheddar Cheese instead of using cheese slices, you can do so too.

My son, at first sight, was not very sure about the green colour of his meal. But when I insisted that he should taste one spoon of it, I did not have to make another effort. Within minutes, the bowl was empty!
